Sundried Tomato, Feta and Basil Muffins

With my basil (okay… Rick’s basil
) growing so beautifully, I was inspired to make some savory muffins featuring fresh basil – thought up this recipe from my basic muffin mix recipe and it worked very nicely.
Ingredients:
Dry ingredients
- 2 cups Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda (Bicarbonate of Soda)
- 1 tbsp sugar (optional)
- 1 tsp salt
Wet ingredients:
- 1 cup milk,
- 2 eggs
- +/- 50ml of the oily vinaigrette from the sundried tomatoes
To fold in:
- 1/4 cup sundried tomatoes (in vinaigrette)
- 1/4 cup crumbly feta cheese
- handful of basil leaves (to taste)
Method:
- Combine dry ingredients in a mixing bowl and work through with a fork till well mixed
- Combine wet ingredients in a separate jug and mix well
- Add the wet to dry and mix till just combined (don’t overmix)
- Fold in the sundried tomatoes, feta and basil
- Scoop a 1/4 cup mixture in a lined muffin tin
- Bake for 20 mins in 180C oven (turning pan halfway through to ensure an even bake)
